The popularity of food emulsifiers has spread out to a number
of regions all across the globe. It is basically a wide range of chemical ingredients
which help food ingredients, like water and oil, to perfectly blend while
mixing, leading to the formation of an emulsion. Food emulsifiers can also be
utilized as aerating agents for making dessert items such as cakes. Also, it is
used as a crystallization inhibitor, with an aim to dodge the occurrence of
white patches over chocolates. There are several emulsifier varieties, namely,
lecithin, glycerides, mono and diglycerides, fatty acid derivatives etc., which
are preferred by most consumers.

Lecithin
Considering the emulsifier and co-emulsifier market, lecithin is the variety that holds significant demand. It is
extracted from vegetable oils like unflower and soy oil. Lecithin can be found
in a number of food products, including chocolate, margarine, bubble gum, breads
and cakes, sauces and salad dressings.
Mono and Diglycerides
It is important to know that, mono and diglycerides, together
with their purified version called as distilled monoglycerides, are the oldest
food emulsifiers. Such type of emulsifiers are created with the mixing of
glycerin with edible oils. You can see that, these are widely utilized for the
production of dairy and bakery products.
Fatty Acid Derivatives
Talking about emulsifiers created from fatty acid
derivatives, propylene glycol esters (PGMS), polyglycerol esters (PGE), sucrose
esters, stearoyl lactylates, polysorbates and sorbitan esters are known as the
well-known versions. To be specific, PGE are used to make cakes & icings,
salad oils and margarine, whereas PGMS is used primarily for whippable
toppings. On the other hand, dough strengtheners are made using sorbitan stearoyl
lactylates and polysorbates are preferred for creating aeration in cakes &
icings. Interestingly, sucrose esters are associated to bubble gum, soups, and
canned liquid coffee and sauces.
